Wash and chop the eggplants, zucchinis, bell peppers, tomatoes, onion, and garlic.
Heat the olive oil in a large pot over medium heat. Add the onions and garlic and sauté until they start to soften.
Add the eggplants, zucchinis, bell peppers, and tomatoes to the pot. Stir in the thyme, basil, salt, and pepper.
Cover the pot and let it simmer for about an hour, or until the vegetables are tender and the flavors have melded together.
Serve the ratatouille hot, either as a standalone dish with some crusty bread on the side, or as a side dish.
