Clean the chicken thoroughly and remove the innards if any.
In a pot, add water, chicken, ginger, and salt. Let it boil for about an hour until the chicken is cooked.
While the chicken is boiling, wash the rice and drain. Then, sauté the rice with garlic and ginger until it's fragrant. Add the chicken stock to the rice and cook.
When the chicken is done, remove it from the pot and let it cool. Then, chop the chicken into serving pieces.
Serve the chicken with the cooked rice, slices of cucumber, and chili sauce.
