Preheat oven to 375°F (190°C).
Scrub potatoes and pat dry.
Prick potatoes with a fork and rub with butter.
Bake in preheated oven for 45 minutes.

Preheat oven to 375°F (190°C).
Scrub potatoes under cold running water. Pat dry with paper towels.
Prick potatoes several times with a fork and rub with butter.
Place potatoes on a baking sheet and bake in preheated oven for 45 minutes or until tender.
Remove from oven and cut in half lengthwise.
Scoop out the insides of the potatoes into a medium bowl and mash with a fork.
Add sour cream, cheddar cheese, green onions, salt and pepper and mix until smooth.
Spoon the mixture back into the potato skins.
Bake in preheated oven for an additional 15 minutes or until cheese is melted and bubbly.
