Heat the oil in a large pan over medium heat.
Add the garlic, lemongrass, and chilli flakes and cook for 1-2 minutes.
Add the fish sauce, coconut milk, and vegetables and simmer for 15 minutes.
Stir in the brown sugar and lime juice and simmer for an additional 15 minutes.
