Shuwa is a traditional Omani dish made from a whole lamb which is marinated in a variety of spices, then slow-cooked in a sand oven for a day or two. The result is a tender, flavorful and aromatic dish that is traditionally served over rice.

                                        1 tbsp ground turmeric

                                        2 tbsp salt

                                        1 cup white vinegar                
- 
                                        1 cup vegetable oil

                    Clean the lamb and prepare the marinade by mixing the spices, garlic, vinegar and oil. Marinate the lamb for several hours.
 Dig a hole in the sand, line it with hot coals, then place the marinated lamb in it and cover with sand. Cook for 24-48 hours.
