Preheat your oven to 375°F. While the oven is heating, chop your onion and shred your chicken if it isn't already shredded.
Spread a thin layer of green chile sauce in the bottom of a 9x13 inch baking dish. This will help prevent the enchiladas from sticking to the dish.
Take a tortilla and spread a small amount of green chile sauce on one side. Then, place a handful of chicken and a sprinkle of cheese in the center. Roll the tortilla up and place it seam side down in the baking dish. Repeat with the remaining tortillas.
Once all the tortillas are filled and rolled, spread the remaining green chile sauce over the top. Sprinkle the remaining cheese over the top.
Place the dish in the preheated oven and bake for 30 minutes, or until the cheese is melted and bubbly.
