Preheat oven to 400°F.
Pierce potatoes with a fork and bake for 1 hour.
Cook bacon until crispy.
Cut a slit in the top of each potato, scoop out the inside, mix with cheese, bacon, salt, and pepper, then return the mixture to the potato shells.
Bake for another 15 minutes until cheese is melted.
Top with sour cream and green onions before serving.

Preheat the oven to 400°F. Clean the potatoes and dry them off completely.
Pierce each potato a few times with a fork. This will allow steam to escape and prevent the potatoes from bursting in the oven.
Place the potatoes directly on the oven rack and bake for about 1 hour, or until the potatoes are crispy on the outside and soft on the inside.
While the potatoes are baking, cook the bacon in a pan until crispy. Drain on paper towels and crumble into small pieces.
When the potatoes are done, cut a slit in the top of each one. Scoop out the inside of the potatoes, leaving a thin layer of potato in the skins.
Mix the scooped-out potato with the shredded cheddar cheese, crumbled bacon, salt, and pepper. Return this mixture to the potato shells.
Put the potatoes back in the oven and bake for another 15 minutes, or until the cheese is melted and bubbly.
Remove the potatoes from the oven and top each one with a dollop of sour cream and some chopped green onions. Serve immediately.
