In a large bowl, dissolve yeast in warm water. Stir in salt, sugar, and flour to form a soft dough.
Turn onto a floured surface; knead until smooth and elastic, about 4-6 minutes.
Divide the dough into 12 equal pieces. Roll each into a 16-in. rope. Twist into a pretzel shape.
In a large saucepan, bring 2 quarts of water and baking soda to a boil. Drop pretzels into boiling water, two at a time; boil for 10-15 seconds. Remove with a slotted spoon; drain on paper towels.
Bake at 425°F for 8-10 minutes or until golden brown.
In a shallow bowl, combine sugar and cinnamon. Dip warm pretzels in butter, then coat with cinnamon-sugar.
