Heat oil in a large pot over medium-high heat.
Add beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks.
Add onion, garlic, paprika, cumin, coriander, oregano, thyme, salt and pepper, and stir.
Add carrots, celery, beef broth, tomatoes and potatoes, and bring to a boil.
