Heat coconut oil in a large pan over medium heat.
Add the garlic, onion, tomato, ginger and spices and cook for 5 minutes.
Add the chicken and stir to coat with the spices.
Add the water and bring to a boil.
Reduce heat and simmer for 30 minutes, stirring occasionally.

Heat 2 tablespoons of coconut oil in a large pan over medium heat.
Add the 1 cup of minced garlic, 1 cup of diced onion, 1 cup of diced tomato, 1 tablespoon of minced ginger, 1 tablespoon of turmeric powder, 2 teaspoons of cumin powder, 2 teaspoons of coriander powder, 2 teaspoons of cayenne pepper and 2 teaspoons of garam masala. Cook for 5 minutes.
Add the 2 pounds of chicken and stir to coat with the spices.
Add the 1 cup of water and bring to a boil.

Serve with steamed rice.
