This traditional Antiguan stew is a perfect blend of spices, coconut milk, and fish. It's a great dish for a warm summer evening, or served with a side of rice for a complete meal.
Heat the oil in a large saucepan over medium heat.
Add the garlic, allspice, ginger, nutmeg, cinnamon, cloves, salt, and pepper and cook for 1 minute.
Add the coconut milk, onion, and cilantro and bring to a boil.
Reduce the heat to low and simmer for 10 minutes.
Add the fish and cook for 15 minutes, or until the fish is cooked through.
