Mix together 1/4 cup of granulated sugar, 1/2 teaspoon of ground cinnamon, and 1 tablespoon of lemon juice in a small bowl. Mix until combined.
In a separate bowl, mix together 1 cup of all-purpose flour, 2 tablespoons of granulated sugar, and 1/2 teaspoon of salt. Mix until combined.
Cut 1/2 cup of cold butter into the dry ingredients until it resembles coarse meal.
Add 1/4 cup of cold water to the mixture and mix until it forms a dough.
Roll out dough and place in a 9-inch pie pan.
Add apples to the pie pan and top with the sugar mixture.
Sprinkle 1/4 cup of light brown sugar over the top of the pie.
