This traditional Yemeni dish is a fragrant mix of spiced rice, cooked with a blend of spices, onions, and garlic. It is a great accompaniment to many dishes, and can be served as a main course.
In a large saucepan, heat the olive oil over medium heat.
Add the onion and garlic and cook until softened, about 5 minutes.
Stir in the cumin, coriander, turmeric, cinnamon, and cardamom, and cook for 1 minute.
Add the rice and cook for 2 minutes, stirring constantly.
Stir in the broth and salt and bring to a boil.
Reduce the heat to low, cover, and simmer for 15 minutes.
Remove from the heat and let stand, covered, for 10 minutes.
Fluff the rice with a fork before serving.
