This traditional fish stew from Virgin Gorda is a delicious and healthy meal. It's easy to make and packed with flavour.
Chop the onions and tomatoes.
Mince the garlic.
Season the fish with salt, pepper, oregano and paprika.
Heat the olive oil in a large pot over medium-high heat.
Add the onions and garlic and sauté until softened.
Add the tomatoes, thyme, oregano, paprika and white wine and stir to combine.
Add the fish fillets and simmer for 20 minutes.
Serve with a side of rice or potatoes.
