Start by cooking the rice noodles according to the instructions on the package. Once cooked, drain the noodles and combine them with the soy sauce and sesame oil. Set aside.
Fill a large bowl with warm water. Dip the rice paper wrappers in the water one at a time for about 10 seconds until softened. Lay the wrapper on a flat surface.
Fill the wrapper with the prepared noodles and vegetables. Start with a layer of noodles in the middle of the wrapper and top with the carrots, cucumber, bell pepper, green onion, mint, basil and cilantro leaves.
Fold the wrapper according to the instructions on the package. Start by folding the sides of the wrapper over the filling. Then fold the bottom part of the wrapper over the filling and roll the wrapper up.
Repeat the process with the remaining wrappers and filling. Serve the rolls with a delicious peanut sauce.
