Preheat oven to 350°F (175°C).
In a medium bowl, mix together ricotta cheese, 1 cup mozzarella cheese, 1/4 cup Parmesan cheese, parsley, oregano, basil, garlic powder, salt, and pepper.
In a large skillet, heat olive oil over medium-high heat. Add zucchini, mushrooms, and onion. Cook until vegetables are tender, about 10 minutes.
Spread 1/2 cup of marinara sauce in the bottom of a 9x13 inch baking dish.
Layer 4 lasagna noodles over the sauce.
Spread 1/3 of the ricotta cheese mixture over the noodles. Top with 1/3 of the vegetable mixture and 1/2 cup of marinara sauce.
Repeat layers twice more. Top with remaining 4 noodles, remaining marinara sauce, and remaining mozzarella and Parmesan cheese.
Cover with aluminum foil and bake for 30 minutes. Uncover and bake for an additional 15 minutes.
