In a large bowl, beat 6 eggs until well blended.
Chop the spinach, bell peppers, tomatoes, and onions into small pieces.
Heat 2 tbsp of olive oil in a non-stick frying pan over medium heat.
Add the chopped vegetables to the pan and sauté for about 5 minutes, until they are soft.
Pour the beaten eggs over the vegetables in the pan, making sure to distribute them evenly.
Sprinkle 1 cup of cheese on top of the egg and vegetable mixture.
Place the pan in an oven preheated to 350°F and bake for about 15 minutes, until the eggs are set and the cheese is melted and slightly browned.
