In a large pot, heat the olive oil over medium heat.

Add the garlic powder, onion powder, ground ginger, ground turmeric, ground coriander, ground cumin, ground cardamom, ground pepper, and salt. Cook for 1 minute.
Add the fish stock and coconut milk and bring the mixture to a boil.
Add the fish fillets and chopped tomatoes and cook for 10-15 minutes, or until the fish is cooked through.
Stir in the chopped parsley and serve.
