Combine the white wine, garlic, and nutmeg in a fondue pot and heat over medium-high heat until simmering. Reduce heat to low.
Add the cheeses a handful at a time, stirring until melted before adding the next handful. Once all of the cheese is added, continue stirring until the cheese is completely melted and smooth.
Stir in the cornstarch and kirsch, and continue stirring until the fondue is thick and creamy.
Serve with cubed French bread, cut vegetables, and/or apples for dipping.
