Bring 1 cup of sushi rice and 2 cups of water to a boil in a saucepan. Reduce the heat to low and simmer for 15 minutes, or until the water is absorbed and the rice is tender. Remove the pan from the heat and stir in 1 tablespoon of rice vinegar.
Lay out the ingredients for the sushi roll on a cutting board. Slice the tuna, cucumber, and avocado into thin strips.
Lay out a sheet of nori on a sushi mat. Spread the cooked sushi rice over the nori, leaving a 1-inch border at the top. Place the tuna, cucumber, and avocado strips in the center of the sushi roll.
Roll the sushi mat over the filling ingredients, pressing lightly to form the roll. Sprinkle the sesame seeds over the roll.
