Reduce heat to low, cover and simmer for 25-30 minutes.

Add the rice and stir to coat in the oil. Cook for another 2 minutes.
Add the cumin, paprika, salt and pepper and stir to combine.
Add 2 cups of water and bring to a boil.
Reduce heat to low, cover and simmer for 25-30 minutes, or until the rice is cooked through.
Remove from heat and let sit, covered, for 10 minutes.
Fluff the rice with a fork before serving.
