Start by preparing your ingredients. Chop the onion and garlic, and slice the bell pepper. Heat the olive oil in a large, shallow pan. Add the chicken thighs and cook until they're browned on all sides. Add the Arborio rice and a pinch of saffron. Stir well to coat the rice in the oil and saffron. Pour in the chicken stock, then add the mixed seafood, green peas, and sliced bell pepper. Cook the paella on a medium heat until the rice is tender and all the liquid has been absorbed. This should take around 20-25 minutes. Serve the paella straight from the pan, with lemon wedges on the side for squeezing over.
