Anjero is a type of flatbread similar to a pancake, native to Somalia. This recipe walks you through the steps to make your own Anjero at home, complete with three different types of dipping sauces - a tomato-based sauce, a yoghurt-based sauce, and a honey-based sauce.

In a large bowl, mix together the sorghum flour, cornmeal, yeast, salt, and sugar.
Add the warm water and stir until the mixture is smooth. Cover the bowl and let it sit for about two hours to ferment.
Heat a non-stick skillet over medium heat. Pour a ladleful of the batter onto the skillet and cook until bubbles form on the surface, then flip and cook the other side.
For the tomato sauce, blend tomatoes until smooth and heat in a saucepan. For the yoghurt sauce, simply mix yoghurt with some herbs. For the honey sauce, mix honey with a bit of warm water.
