Preheat oven to 350°F. Line a 9-inch pie dish with parchment paper and set aside.
To make the crust, combine the flour, butter, sugar, and salt in a food processor and pulse until the mixture resembles coarse meal. Add the cold water and pulse until the dough just comes together. Turn the dough out onto a lightly floured surface and shape into a disc. Wrap in plastic wrap and refrigerate for 20 minutes.
To make the filling, peel and core the apples and cut into ½-inch thick slices. In a large bowl, combine the apples, brown sugar, cinnamon, lemon juice, and cornstarch. Toss to combine.
To assemble the pie, roll out the dough on a lightly floured surface to a 12-inch circle. Transfer the dough to the prepared pie dish and trim the edges. Pour the filling into the crust and dot with butter. Roll out the remaining dough and cut into ½-inch wide strips. Arrange the strips in a lattice pattern over the top of the pie. Trim the edges and crimp to seal. Bake for 45 minutes or until the crust is golden brown and the filling is bubbling.
Allow the pie to cool before serving.
