Simmer for 25 minutes.
Add fish and cook for 5 minutes.
Garnish with chopped cilantro and serve.

Heat 2 tablespoons of oil in a large pan over medium heat.
Add 1 cup of chopped onion and cook for 3 minutes.
Add 1 tablespoon of curry powder and cook for 1 minute.
Add 1 cup of chopped tomatoes, 1 cup of coconut milk, 1 tablespoon of salt, 1 tablespoon of ground black pepper, 1 tablespoon of garlic powder, 1 tablespoon of ginger powder and 1 tablespoon of cumin powder.
Simmer for 25 minutes.
Add 2 pounds of fish fillet and cook for 5 minutes.
Garnish with 1 cup of chopped cilantro and serve.
