In a large bowl, combine the garlic, ginger, cumin, coriander, paprika, cayenne pepper, and salt. Add the chicken and mix until evenly coated. Cover and refrigerate for 30 minutes.
In a large pot, heat the oil over medium heat. Add the chicken and cook until lightly browned, about 5 minutes. Add the onion, bell pepper, and tomato and cook for 5 minutes more. Pour in the chicken broth and bring to a boil. Reduce the heat to low and simmer for 10 minutes.
