Add the fish, tomatoes, onions, carrots, celery, potatoes, green beans, red peppers, zucchini and mushrooms and cook for 5 minutes.
Pour in the coconut milk and bring to a boil.
Reduce the heat to low and simmer for 30 minutes.
Serve with cooked rice or crusty bread.
