Heat 2 tablespoons of vegetable oil in a large pot over medium-high heat.
Add 1 pound of beef and cook until browned, stirring occasionally.
Add 1 chopped onion, 2 minced garlic cloves, and 1 tablespoon of minced ginger and cook until softened, about 5 minutes.
Add 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, 1/2 teaspoon of ground nutmeg, 1/2 teaspoon of ground cinnamon, 1/4 teaspoon of ground cloves, and 1/2 teaspoon of cayenne pepper and cook for 1 minute.
Add 2 cups of diced tomatoes, 2 cups of chicken broth, 1 cup of diced carrots, 1 cup of diced potatoes, and 1 cup of diced bell pepper. Bring to a boil, reduce heat, and simmer for 30 minutes.
Add 1/2 cup of chopped fresh parsley, 1/4 cup of chopped fresh cilantro, 1/2 cup of chopped peanuts, 1/2 teaspoon of salt, and 1/4 teaspoon of ground black pepper and simmer for 15 minutes.
Serve hot.
