Add the potatoes, carrots, and onion and cook for another 10 minutes. Stir occasionally to make sure everything is cooking evenly.
Add enough water to cover the ingredients and bring to a boil. Once boiling, reduce the heat and simmer for 1 hour, stirring occasionally.
Once the stew is cooked, remove from the heat and serve hot.
