Heat the oil in a large saucepan over medium heat.
Add the onions and garlic and cook, stirring occasionally, until the onions are softened, about 5 minutes.
Add the ginger, cumin, coriander, turmeric, cinnamon, cardamom, nutmeg, and cloves and cook, stirring, for 1 minute.
Add the coconut milk, vegetable broth, tomatoes, bell pepper, carrots, potatoes, green beans, and zucchini and bring to a simmer.
Reduce the heat to low and simmer, stirring occasionally, until the vegetables are tender, about 20 minutes.
Stir in the lemon juice, cilantro, and parsley and season to taste with salt and pepper.
