Start by washing and seasoning the chicken with salt, curry and thyme. Set aside to marinate for 15 minutes
While the chicken is marinating, blend the tomatoes, onions, and pepper until smooth
Rinse the rice in cold water until the water runs clear. Then parboil the rice for 5 minutes and drain
In a large pot, heat the vegetable oil and fry the chicken until it is browned on all sides. Remove the chicken and set aside
In the same pot, add the tomato blend and cook until it reduces by half
Add the parboiled rice and fried chicken to the pot. Stir to combine
Cover the pot and cook on low heat until the rice is done and the flavors have melded together
