                                        2 cups long-grain rice

                                        2 tablespoons vegetable oil

                                        1 onion diced                
- 
                                        2 cloves garlic, minced                
- 
                                        2 cans diced tomatoes

                                        2 teaspoons ground cumin

                                        1 teaspoon ground coriander                
- 
                                        1 teaspoon paprika                
- 
                                        0.5 teaspoon cayenne pepper                
- 
                                        1 teaspoon salt                
- 
                                        4 cups water

                    Heat oil in a large pot over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
 Add tomatoes and spices and cook for 5 minutes.
 Add rice and water and bring to a boil.
 Reduce heat to low, cover and cook for 40 minutes.
 Remove from heat and let stand for 5 minutes before serving.

 Add the diced tomatoes, cumin, coriander, paprika, cayenne pepper, and salt. Cook for 5 minutes.
 Add the long-grain rice and 4 cups of water. Bring to a boil.
 Reduce the heat to low, cover the pot, and cook for 40 minutes.
 Remove the pot from the heat and let stand for 5 minutes before serving.
