Khachapuri is a traditional Georgian dish of cheese-filled bread. The bread is leavened and allowed to rise, and is shaped in various ways, usually with cheese in the middle and a crust which is ripped off and used to dip in the cheese. The filling contains cheese (fresh or aged, most commonly sulguni), eggs and other ingredients.

In a large bowl, combine the flour, sugar, salt and yeast.
Add the warm water and oil, and knead the dough until it's smooth.
Cover the bowl and let the dough rise for about 1 hour.
In the meantime, prepare the cheese filling by mixing the sulguni and feta cheese with the eggs.
After the dough has risen, divide it into portions and shape each portion into a boat. Fill each boat with the cheese mixture.
Bake in a preheated oven at 375°F (190°C) for about 20 minutes, or until the bread is golden brown and the cheese is bubbly.
