This is a traditional Fijian recipe for a rich and flavourful coconut curry. It is easy to make, and is sure to impress your dinner guests.
Heat the coconut oil in a pan over medium heat.
Add the curry powder and stir for 1 minute.
Add the coconut milk and vegetables.
Simmer for 25 minutes, stirring occasionally.
Add the herbs, salt and pepper.
Simmer for an additional 5 minutes.
