Preheat the oven to 375°F (190°C).
Mix together the flour, sugar, and salt in a large bowl.
Cut in the butter until the mixture resembles coarse meal.
Press half of the mixture into the bottom of a 9-inch (23 cm) pie plate.
Mix together the apples, cinnamon, nutmeg, vanilla, brown sugar, and lemon juice in a large bowl.
Pour the apple mixture into the pie plate.
Sprinkle the remaining crust mixture over the top.
