Chop the onion and garlic and set aside.
Mix the spices together in a bowl.
Heat the oil in a tagine or large pot.
Add the onion and garlic and cook until softened.
Stir in the spices and cook for a few minutes.
Add the chicken, tomatoes and chicken stock.
Bring to a boil, reduce the heat and simmer for 1.5 hours.
Add the couscous and cook for another 30 minutes.

Mix the cumin, coriander, cinnamon, turmeric, ginger and paprika together in a bowl.
Heat the oil in a tagine or large pot over medium heat.
Add the onion and garlic and cook until softened, about 5 minutes.
Stir in the spices and cook for a few minutes.
Add the chicken, tomatoes and chicken stock. Stir to combine.
Bring to a boil, reduce the heat and simmer for 1.5 hours, stirring occasionally.
Add the couscous and cook for another 30 minutes, stirring occasionally.
Serve the chicken tagine with couscous.
