Preheat your oven to 325°F and set aside
In a medium saucepan, combine the cream and vanilla extract. Heat over low heat until it's hot, but not boiling
In a large bowl, beat the egg yolks and sugar until they're well combined and thick
Slowly pour the hot cream into the egg mixture, whisking constantly
Pour the mixture into ramekins and place them in a baking dish. Fill the dish with hot water halfway up the sides of the ramekins
Bake for 45 minutes, or until the center is set
Remove from the oven and let it cool. Then refrigerate for at least 2 hours
Before serving, sprinkle each ramekin with the brown sugar and broil until the sugar is caramelized
