Soak the black beans in a large bowl of water overnight.
In a large pot, cook the pork shoulder and bacon until browned.

Cover the pot and let it simmer for about 2 hours, until the beans are tender and the flavors are well combined.
While the stew is simmering, cook the rice in a separate pot according to package instructions.
