Heat the oil in a large pot over medium heat.
Add the onion, garlic, oregano, thyme, cumin, coriander, turmeric, cinnamon and nutmeg and cook until the vegetables are softened, about 5 minutes.
Add the tomatoes, bell peppers, celery, carrots, parsley, and stock and bring to a boil.
Reduce the heat and simmer for 15 minutes.
Add the cod fillets and simmer for another 5 minutes.
Season with salt and pepper and stir in the lemon juice and parsley.
