This traditional Uzbekistan-style pilaf is a flavorful and nutritious dish made with rice, vegetables, nuts, and raisins. It is a great side dish or main course for any meal.
Heat oil in a large pot over medium heat.
Add the onion, carrots and celery and sauté for 5 minutes.
Add the rice and stir to coat with the oil.
Add the walnuts, raisins, broth, salt and pepper.
Bring to a boil, reduce heat to low and cover.
Cook for 45 minutes or until the rice is tender and all the liquid is absorbed.
