A traditional Ukrainian soup made from beets, cabbage, potatoes, carrots, onions, and other vegetables. The soup is usually served with a dollop of sour cream and a sprinkle of fresh dill.
Chop all vegetables into small cubes.
Heat the vegetable oil in a pot over medium heat.
Add the chopped vegetables to the pot and sauté for 5 minutes.
Add the vegetable stock, salt, and pepper and bring to a boil.
Reduce heat and simmer for 25 minutes.
