This traditional stew is a classic Isle of Man dish, made with locally sourced ingredients and cooked to perfection. It is hearty, filling and full of flavour.
Melt the butter and oil in a large pot over medium heat.
Add the onions, carrots and celery and cook for 5 minutes.
Add the potatoes, turnips, parsnips and swede and cook for 10 minutes.
Add the beef stock, dried peas, parsley, thyme, rosemary, sage and pepper and stir to combine.
Bring to a boil, reduce heat to low and simmer for 2 hours.
