Cook bacon until crispy. Drain on paper towels and crumble.
Cut potatoes in half and scoop out the flesh, leaving a thin layer of potato on the skin. Brush with olive oil and season with salt and pepper.
Bake potato skins for 10 minutes. Remove from oven and fill with cheese and bacon. Bake for another 5 minutes or until cheese is melted.

Preheat the oven to 400°F. Wash the potatoes and prick them with a fork. Place them on a baking sheet and bake for 1 hour or until the potatoes are cooked through.
While the potatoes are baking, cook the bacon in a skillet over medium heat until it's crispy. Remove the bacon from the skillet and drain it on paper towels. Once it's cooled, crumble it into small pieces.
After the potatoes have cooled slightly, cut them in half lengthwise. Using a spoon, scoop out most of the flesh, leaving about a 1/4 inch layer of potato on the skin. Brush the inside of the potato skins with olive oil and season with salt and pepper.
Place the potato skins back on the baking sheet and bake for 10 minutes or until they're crispy. Remove the potato skins from the oven and fill them with the shredded cheese and crumbled bacon. Return them to the oven and bake for another 5 minutes or until the cheese is melted and bubbly.
