Heat 2 tablespoons of olive oil in a large pot over medium heat.
Add 1 chopped onion and 2 cloves of minced garlic and cook, stirring occasionally, until softened, about 5 minutes.
Add 1 can of diced tomatoes, 2 cups of fish stock, 1 teaspoon of salt and 1 teaspoon of black pepper and bring to a boil.
Add 1 pound of mixed fish fillets and cook for 8-10 minutes, until cooked through.
Add 1 cup of chopped parsley and 1 cup of chopped cilantro and stir to combine.
Serve with rice, potatoes or crusty bread.
