In a large bowl, combine the warm water and yeast. Let sit for 5 minutes until the yeast is dissolved.
Add the flour, salt and olive oil to the yeast mixture. Stir until a dough forms.
Knead the dough on a floured surface for about 5 minutes until it is smooth and elastic.
Place the dough in a greased bowl and let it rise for about 1 hour, or until it has doubled in size.
Preheat your oven to 475°F (245°C).
Roll out the dough on a floured surface to your desired thickness.
Transfer the dough to a baking sheet. Brush the top of the dough with olive oil.
Thinly slice the peaches and mozzarella. Arrange them on top of the dough. Add the prosciutto.
Bake the pizza in the preheated oven for about 15 minutes, or until the crust is golden and the cheese is bubbly and slightly browned.
