Peach Melba is a classic dessert, invented in 1892 by the French chef Auguste Escoffier at the Savoy Hotel in London to honor the Australian soprano, Nellie Melba. It combines the sweet juiciness of peaches with the tartness of raspberry sauce, all topped off with a scoop of vanilla ice cream.

Boil the peaches for one minute, then immediately move them to a bowl of ice water. Once cooled, peel the peaches and set them aside.
In a saucepan, combine the sugar and water. Bring to a boil, then reduce heat and simmer until the sugar is fully dissolved.
In another saucepan, combine the raspberries and lemon juice. Cook over medium heat until the raspberries break down, then strain the mixture to remove seeds.
To serve, place a peach in each bowl, top with a scoop of ice cream, and drizzle with the raspberry sauce.
