Heat 2 tablespoons of olive oil in a large pot over medium-high heat.
Add 1 pound of offal, 1 cup of chopped onion, 2 cloves of garlic, 2 cups of chopped carrots, 2 cups of chopped celery, 2 tablespoons of chopped parsley, 1 teaspoon of dried thyme, 1 teaspoon of ground black pepper, 1 teaspoon of ground nutmeg, and 1 teaspoon of dried sage.
Cook, stirring occasionally, until the vegetables are tender, about 10 minutes.
Add 2 cups of beef stock and 1 cup of red wine.
