Heat the oil in a wok over medium-high heat.
Add the garlic, ginger, cumin, turmeric, coriander, chili powder, and salt. Cook for 1 minute.
Add the vegetables and chicken and cook for 5 minutes.
Add the soy sauce, fish sauce, and brown sugar. Cook for 3 minutes.
Add the noodles and cook for 5 minutes.
Stir in the peanuts and cilantro. Cook for 1 minute.
