Cover and cook for 15-20 minutes until the vegetables are cooked through.

Add the ginger and garlic paste and sauté for a few minutes until fragrant.
Add the curry powder, turmeric, cumin, coriander and garam masala and stir for a few minutes until fragrant.
Add the chopped vegetables and stir to combine. Cook for a few minutes until the vegetables start to soften.
Add the coconut milk and stir to combine. Bring to a simmer.
Cover and cook for 15-20 minutes until the vegetables are cooked through.
Season with salt and pepper to taste.
