Add the onion and garlic to the pot and cook for 3 minutes, stirring occasionally. Add the chicken broth, water, potatoes, thyme, oregano, salt, and pepper. Bring to a boil.
Reduce the heat to low and simmer for 30 minutes. Add the chicken back to the pot and simmer for an additional 10 minutes. Serve hot.
